So many times I have picked up a newspaper in a café and found an article about an event that looked so good, only to realise it was yesterday. So why not forward info that others would find useful. I have added the Ariege because I often receive info for and from there

Bonjour

Finally summer has arrived? It appears so, let hope it lasts and we don't feel very cheated come October

I would like to congratulate the Optical centre.com for being the most wasteful creator of paper waste with their junk mail. They seem to send mailings to everyone including two to me. When next in Carcassonne I think I will give it to them and suggest what they do with it. If I can find the shop, with these weakening eyes.

The biggest response ever to a subject from the last edition, where I put forward the idea of a meeting for those in the hospitality business.

I will communicate directly with those of you who responded and all of the people I think this is relevant too with regards to a date and I will include that date in the next flyer also.

Well with the growing inflation maybe now is the time to eat even more locally and get more of the garden over to food production, dig for victory and all that. It seems there is already a problem with the local melon production with plants rotting due to excess water?

I had the idea to put a number of artistes together for the Fete De La Musique this coming Saturday, and it all got just too hard, so it's a discoi instead , I know you all are in need of dancing and don't get out much, if you wish to attend email via the link in the events block below left.

I will leave matters Mugabe, Fuel and my other rants until another edition as I need to get this sending ASAP with the growth of the list .

If so ITV1 are making a documentary series about expats who are weighing up the merits of returning home.

It is the great British dream to find a place in the sun which offers tranquility and a better quality of life. It is no surprise then that many people turn to France with its stunning weather, cultural heritage and fiscal benefits. Yet despite this one in three people who leave Britain are returning home every year.

In many cases this has nothing to do with their adopted country but more to do with personal circumstances. Upon making the decision to return some find they fall back in love with the country and decide to stay for good but others are surprised about how much has changed since they left and end up ruing their decision to return.

So how can you be sure the Britain you left offers you the opportunities you crave? How can you reconcile so many factors such as career, property and schooling decisions whilst abroad?

We are offering expats the opportunity to be flown back home to see what the UK has to offer them. They will spend a week back in the UK with a relocation expert who will show them some of the things they have missed about Britain whilst also highlighting the reasons why they moved in the first place.

We hope by the end of the week our contributors will have either developed a new appreciation for what their adopted country offers them, or been inspired to return home.

PLUM TOMATO & GOATS CHEESE SUMMER PIE

The available flat lowland areas of the Aude are filed with grape vines and there isn't enough rain to support grass for grazing animals, so most of the local cheese is made in the hills from sheep or goats milk. These cheeses are made in small palm sized disks called Pélardons and Crotins. Cantal cheese is made from cows milk and is the oldest of French cheeses dating back to the time of the Gauls, children love it and it is great for cooking. Tomme de Pyrénées with its distinctive black skin is the perfect cheese to be eaten with local tomatoes and fresh bread whilst looking at a breathtaking view or relaxing on a shady terrace.

The most famous local cheese is the blue Roquefort; made from sheep's milk and matured in the caves of Roquefort-sur-Soulzon. Arguably the king of cheeses if you don't include Stilton in the list!

Here is a simple but tasty recipe for a savory summer pie using local cheese, tomatoes and the fabulous ready rolled pastry available from any supermarket chill cabinet. Delia eat your heart out!

Ingredients

1 egg yolk (lightly beaten)
3 tablespoons dried bread crumbs
2 pounds fresh tomatoes - sliced (plumb tomatoes or the huge ones that look like Martians heads are the best for flavour when cooked)
4 oz local goats cheese (or any other local cheese that you may prefer)
1 savoury pastry disk
2-4 tablespoons olive oil
1 tea spoon of basil or other fresh herbs
pinch of salt and freshly ground black pepper

Place the pastry disc on a non stick baking sheet and brush it lightly with 2/3 of the beaten egg yoke and sprinkle with the breadcrumbs.

Arrange tomato slices so they overlap in a circle, leaving a wide border of pastry round the outside edge.

Cut the cheese into small cubes and scatter over the top of tomatoes.

Turn the outer edge of the pastry in over tomato and cheese filling leaving the centre of the pie open and making little tucks in the pastry where necessary to make it fit and then brush the top of the pastry with remaining egg yolk.

Bake the pie in a preheated oven at 350°F until pastry is golden.

Remove the pie from oven and drizzle with the olive oil and season well with salt and pepper.

Scatter basil leaves/chives/other fresh herbs on top of pie and serve.

For a dinner party variation use cherry tomatoes and feta cheese and make little individual tarts using puff pastry.

Road safety - and Gilet triangle mandatory

The announcement does not make much noise but from 1 July 2008, all motorists french must have in their vehicles with a triangle of pre-signalling and a retro-reflective vest.

And attention, during a check of the Maréchaussée, it will cost less a fixed fine of 90 euros (Fourth Class) by missing element.

With this decision by the Interministerial Committee on Road Safety, France joined many European countries like Spain. Previously, France advised merely the presence of these accessories with Article R416-19 of the Highway Code:

"When the vehicle stopped on the road is a traffic hazard (...) the driver must ensure the pre-signalling the obstacle by using its hazard warning triangle or a pre-warning / of all these two devices "

ATTENTION: your jacket should be in the passenger and not in your chest. It must be accessible to put ds exit your vehicle. Spread the news to your connaissabces, you avoid paying them a ticket for holidays.

Eating strawberries is a good way to clean your teeth, they remove plaque and leave your mouth tasting fresh.

 If you are bothered by slugs and snails but don't want to use slug pellets try planting a ring of cheep lettuces around your more prized varieties. Once the slugs and snails have found a supply of food they won't bother to look elsewhere.

 

On 9th August there is going to be a photograph festival in Cailhau. There will be two competitions - one before the day, and one on the day, with photos on display etc. It is open to anyone, and we want to publicise it as widely as possible.
